Mrs Darlington's Lime Marmalade

Mrs Darlington's Lime Marmalade is made near Nantwich in Cheshire by a family firm that has cooked its own preserves since 1980. The maker describes it as a tangy way to wake up your taste buds, which is fair: it is the sharpest marmalade in the range.

It is prepared with 40g of limes per 100g, cooked with sugar, water and pectin, with a little trisodium citrate to hold the acidity and lime oil for aroma. There is no added colour, so the pale green comes from the peel. The shred is fine and the flavour is clean and citrussy rather than bitter, closer to a lime curd's brightness than a Seville orange's depth.

It is a breakfast marmalade for people who find orange too sweet, and a useful one in the kitchen: brush it over chicken thighs or a salmon fillet in the last minutes of cooking, whisk it into a dressing with olive oil, or drop a teaspoon into a gin and tonic. Alongside Mrs Darlington's Medium Cut Orange Marmalade it makes a good pair on a breakfast table.
