Mrs Darlington's Dijon Mustard is made near Nantwich in Cheshire by a family firm that has cooked its own preserves since 1980. The maker describes it as as mild as it is tasty, and a wonderful addition to salad dressings.
There are four ingredients: water, mustard seeds, spirit vinegar and salt. That is the classic Dijon method, and it gives a smooth, pale mustard with a clean sharpness and a heat that is present but gentle, well short of the English Mustard in the same range.
Whisk it into a vinaigrette with oil and a little honey, where it holds the dressing together as well as flavouring it. The maker's tip is to brush it onto the sausages for a toad in the hole before they go in the oven. It is also the mustard for a ham sandwich, a rarebit, a creamy sauce for pork or chicken, and the glaze on a roast gammon.
