White Lake Pavé Cobble Ewe's Milk Cheese 200g

Pavé Cobble is a soft ewes' milk cheese shaped into a flat-topped pyramid and coated in ash, made by White Lake Cheese at Bagborough Farm in Pylle, near Shepton Mallet in Somerset, from thermised milk with vegetarian rennet. It is their sheep's milk take on a French style, and it took a Super Gold at the World Cheese Awards in 2025.

The maker describes a dense, weighty cheese with a loose, curdy texture when young that turns smooth and melt-in-the-mouth creamy as it ages. On the palate there is an initial hit of sweet cream followed by a Greek yoghurt acidity, and the rind adds a little pepper, salt and earthy notes. Milk is the only declared allergen.

Give it half an hour out of the fridge, then cut it in wedges from the top so everyone gets rind and paste.
