Tracklements Strong English Mustard

Tracklements Strong English Mustard is a hot, smooth mustard that Tracklements make at Easton Grey near Malmesbury in Wiltshire from mustard flour, cider vinegar and water, with nothing else in the jar beyond sea salt, a little sugar, lemon juice and turmeric.

Mustard flour makes up 39% of the jar, which is a high proportion and explains the strength. Water and cider vinegar bring it to a paste, sea salt and a little raw cane sugar balance it, concentrated lemon juice keeps it bright, and turmeric gives the yellow colour. The taste is direct: a clean, sharp mustard heat that climbs into the nose and then fades, with no sweetness to soften it.

This is the mustard for gammon, sausages and a pork pie, and for a ham sandwich where a small amount does a lot. Spread it thinly on roast beef, stir a teaspoon into a cheese sauce for cauliflower cheese or Welsh rarebit, or whisk a little into a salad dressing. Use it sparingly: a pea-sized amount is enough for most people.

The jar holds 140g. Contains mustard. Refrigerate once opened.
