Tracklements Sriracha Chilli Mayonnaise

Tracklements Sriracha Chilli Mayonnaise is a rich, spicy mayonnaise that Tracklements make at Easton Grey near Malmesbury in Wiltshire by fermenting a careful balance of red chillies and garlic for five days before blending them into the mayo. The producer calls it a labour of love and says the fermenting is what gives it its tongue-tingling tang.

Sunflower oil makes up 73% of the jar and pasteurised free range egg 8%, with cider vinegar, red chillies at 2.5%, mustard seed, salt, red peppers, raw cane sugar and lemon juice. Onions, garlic puree and a small amount of anchovy bring the savoury depth. It is creamy and rich first, then the chilli heat arrives as a warm, steady glow rather than a punch, with the ferment giving a sour edge underneath.

The producer suggests it on burgers, chicken wings, sandwiches and fries, and in an egg mayo sandwich. It is also good with fish and chips, prawns, a fried chicken burger or a jacket potato, and it turns a plain coleslaw into something worth eating with barbecued meat.

The jar holds 200g. Contains egg, mustard and fish, so it is not suitable for vegetarians. Gluten free. Refrigerate once opened.
