Tracklements Spitfire Chilli Mustard

Tracklements Spitfire Chilli Mustard is a hot mustard with chilli added, made by Tracklements at Easton Grey near Malmesbury in Wiltshire using Canadian mustard flour, which they say gives the mustard its blast of heat. The producer calls it a volcanic condiment for courageous tastebuds.

Mustard flour makes up 33% of the jar, with water, raw cane sugar, sea salt and cider vinegar making it into a smooth paste. Chilli powder adds a second kind of heat that sits on the tongue after the mustard has cleared the nose, and turmeric and lemon juice give it colour and a sharp finish. It is hot in two stages, so go carefully the first time.

The producer suggests it with cheese, hams and sausages, and say it fires up cold meats. It is the mustard to put on a hot dog, a bacon sandwich or a slice of cold roast pork, and a small amount stirred into mashed potato or a cheese toastie wakes them up. It is also good whisked into a dressing for a beef salad.

The jar holds 140g. Contains mustard. Refrigerate once opened.
