Tracklements Quintessential Brown Sauce

Tracklements Quintessential Brown Sauce is a dark, fruity table sauce that Tracklements make at Easton Grey near Malmesbury in Wiltshire from tomato, tamari, dates and tamarind. It comes in a 300g bottle.

Tomato puree makes up 35% of the sauce, and tamari, a wheat-free soy sauce, another 12%. Cider vinegar brings the sharpness, and muscovado sugar and molasses the dark, treacly sweetness, with onions at 7%, tamarind paste, dates, garlic and a few chillies filling in the savoury, fruity middle. The result is what a brown sauce should be: tangy, sweet and savoury at the same time, with a mild warmth from the chilli and none of the thin, vinegary sting of cheaper versions.

Pour it over a bacon sandwich, a sausage roll or a full English breakfast, and keep it beside a plate of bubble and squeak, a pork pie or a cheese toastie. It is good with cold roast beef and stirred into a gravy for sausages and mash. A spoonful in a beef stew or a bean chilli adds depth too.

The bottle holds 300g. Contains soya and is suitable for vegans. Shake before use and refrigerate once opened.
