Tracklements make this tomato ketchup in Wiltshire, England. Sun-ripened tomatoes are cooked down slowly with raw cane sugar, spirit vinegar and a quiet blend of cloves, allspice and black pepper.
The result is rich and savoury, with a gentle warmth from the spices and a clean tomato sweetness. It has none of the cloying flatness of mass-made ketchup. The texture is thick and pourable, the kind that sits well on a plate.
