Tracklements Mango & Chilli Chutney

Tracklements Mango & Chilli Chutney is a hot version of a mango chutney that Tracklements make at Easton Grey near Malmesbury in Wiltshire with gently roasted cumin and coriander seeds and fresh chillies. The producer describes it as a boisterous version of their mango chutney, with a lip-tingling heat and mellow notes of spice.

Mango makes up 45% of the jar, cooked with sugar and sugar cane vinegar, salt, chillies, cumin, coriander, ginger and garlic. The mango keeps it sweet and soft, the vinegar gives it a sour edge, and the roasted seeds bring an earthy, toasted flavour underneath the chilli. The heat is noticeable but it does not take over the fruit.

The producer suggests a generous dollop to fire up a curry, and they use it in a tandoori chicken burger in their recipe section. It is the chutney for poppadoms and onion bhajis, for a cheese sandwich that needs a lift, and for cold ham, roast chicken or grilled halloumi. Stir a spoonful into a dal or a lentil soup, or serve it with a mild cheddar or a paneer dish.
