A fermented, air dried salami built on Somerset mutton, made by Somerset Charcuterie at Castle Cary in Somerset with chopped rosemary and crushed garlic.
Mutton is the older, deeper flavoured meat that most of the country stopped eating, and the rosemary and garlic are heavy enough to stand up to it. It takes 122g of mutton to make 100g of salami.
Sold pre-sliced in a 60g pack. Bring it to room temperature and open the pack to breathe half an hour before serving.
