Chocolarder Sea Salt Caramel Truffles, Box of 12

Soft salted caramel truffles coated in single-origin dark chocolate, made by Chocolarder at Falmouth in Cornwall, where the maker grinds its own chocolate from the bean on renovated antique machines. The shell is their Asháninka 72% dark chocolate, made from cocoa grown in the Peruvian Amazon.

The ingredient list is short: cocoa beans, unrefined raw sugar, Cornish clotted cream, glucose and Cornish sea salt. The cream comes from Trewithen Dairy, a family of Cornish dairy farmers. The caramel is soft and rich, the sea salt flakes are there to balance its sweetness, and each truffle is panned in the thick dark chocolate and rolled in the maker's own pressed cocoa powder. Bite through and the contrast is the point: a firm, slightly bitter 72% shell, then a smooth, salty caramel centre. Twelve to a box.

Serve them with coffee after a meal, or with a glass of something: Filey Bay STR Red Wine Cask English Single Malt Whisky stands up to the dark shell, and a chilled glass of Nyetimber Classic Cuvée Sparkling Wine plays against the salt.
