Chocolarder are a bean-to-bar maker working out of their own workshop in Cornwall, where founder Mike Longman has made single-origin chocolate from raw cocoa beans since 2012. These truffles are built from little more than beans, sugar and cream — a soft caramel made with fresh Cornish cream and Cornish sea salt, encased in their 72% dark chocolate and rolled in pressed cocoa powder.

The dark shell uses Asháninka cocoa, bought direct from the Asháninka people of the Peruvian rainforest. The salt keeps the caramel's richness in check; the result sits squarely between sweet and savoury.
