Chocolarder Pure Dark 100% Chocolate

One ingredient: cocoa beans. A 100% bar made by Chocolarder at Falmouth in Cornwall from cocoa grown by the Asháninka people in the Peruvian Amazon.

No sugar goes in, so there is nowhere for a poor bean to hide, which is rather the point of making one at all. The Asháninka cocoa is fruity enough to carry a bar on its own: it reads tart rather than bitter, and the texture does the rest, ground fine on the maker's renovated antique machines until it melts cleanly. If you have tried 100% bars before and found them chalky, this is not that.

A square at a time, with coffee. It is also the bar to reach for in the kitchen when a recipe asks for unsweetened chocolate and you want to set the sugar yourself. Sits with the rest of the confectionery collection.
