Chocolarder Hazelnut Praline Filled 70% Dark Chocolate

A filled bar from Chocolarder at Falmouth in Cornwall: a soft hazelnut praline inside a 70% dark chocolate shell, made with cocoa from Seram Island in Indonesia.

This is the maker's first filled bar. The shell is 60% of it, ground from the bean on their antique machines, and the praline is the remaining 40%, made from organically grown Sicilian hazelnuts from the slopes of Mount Etna with sugar and cocoa butter. The praline is soft rather than crunchy, so the bar gives way when you bite it instead of snapping. Dark chocolate at 70% keeps the hazelnut from turning cloying.

Good with coffee, and a sensible choice for anyone who finds plain dark bars austere. It belongs with the rest of the confectionery collection in a hamper.

A 70g bar. Ingredients: Dark chocolate (60%) (cocoa beans, unrefined sugar), hazelnut praline filling (40%) (HAZELNUTS (40%), unrefined sugar (40%), cocoa butter (20%)). Allergens: hazelnuts. Made in a factory that handles milk and tree nuts. Keep somewhere cool and dry, out of direct sunlight.
