Mrs Darlington's Wonderful Winter Berry Preserve

Mrs Darlington's Wonderful Winter Berry Preserve is made near Nantwich in Cheshire by a family firm that has cooked its own preserves since 1980. The maker calls it a fusion of blackberries, plums, cranberries and damsons, paired with the warmth of red wine and spices.

The fruit is prepared at 38g per 100g and cooked with sugar, 2% mulled wine, damson juice, lemon juice, pectin and a natural cinnamon flavour. Cranberries and damsons keep it sharp, plums and blackberries give it body, and the mulled wine and cinnamon are there as a background warmth rather than a spice hit. It is dark, glossy and less sweet than a summer berry jam.

Use it on toast or a warm scone through December, or take it into the kitchen: it is a good glaze for a baked Camembert or Brie, spoons over a pavlova, and makes a quick sauce for venison or duck if loosened with a little stock.
