Mrs Darlington's Redcurrant & Rosemary Jelly with Gin

Mrs Darlington's Redcurrant & Rosemary Jelly with Gin is made near Nantwich in Cheshire by a family firm that has cooked its own preserves since 1980. The maker describes it as a blend of sweet, tangy redcurrants and fresh aromatic rosemary, lifted with a subtle hint of botanical gin.

It is made from redcurrant juice, sugar and water, set with pectin and sharpened with lemon juice, with 6% gin, 0.5% rosemary and a little onion powder to steer it towards the savoury side. There is no added colour or preservative. The jelly is clear and ruby red, the rosemary comes through as a herbal note rather than pine needles, and the gin adds a juniper edge that suits red meat.

Roast lamb is the obvious partner, and it is just as good with venison, duck or a game pie. Melt a spoonful into a Sunday gravy, or serve it as the maker suggests on a festive feast, beside the turkey or on a cheeseboard with a soft goat's cheese and crackers.
