Mrs Darlington's Raspberry Jam

Mrs Darlington's Raspberry Jam is made near Nantwich in Cheshire by a family firm that has cooked its own preserves since 1980. It won a Great Taste star in 2022, and the maker puts that down to the quality of the berries rather than anything clever in the method.

Four ingredients go into it: sugar, raspberries, pectin and lemon juice, prepared with 48g of fruit per 100g and with no added colour or preservative. The seeds are left in, which gives it texture and the slightly tart edge that raspberries should have. It is a deep red, soft set jam that tastes of the fruit first and the sugar second.

The maker suggests it on toast or freshly baked bread, or as the filling in a classic Victoria sponge with fresh cream. It also makes a quick sauce for a cheesecake if loosened with a splash of hot water, and pairs well with Mrs Darlington's Lemon & Lime Curd for a cream tea with two jars on the table.
