Mrs Darlington's Mustard Ketchup

Mrs Darlington's Mustard Ketchup is made near Nantwich in Cheshire by a family firm that has cooked its own preserves since 1980. The maker calls it a hot and bold, mighty wholegrain mustard ketchup with a sweet and tangy flavour, and suggests it with sausages, steak or burgers.

Nearly two thirds of the bottle is mustard: 44% English mustard and 20% wholegrain, with sugar, lemon juice, allspice, turmeric, chilli powder and garlic powder. The English mustard brings the heat and the wholegrain the texture, and the sugar and lemon turn it into something you can squeeze generously rather than dab. It sits between a sweet American mustard and a proper English one.

It is the sauce for a hot dog, a sausage sandwich or a bacon roll, and it works on a steak or a burger in place of both mustard and ketchup. Try a spoonful whisked into a salad dressing with oil and honey, or brushed on a gammon steak before grilling. The English Mustard is the one to buy for the full, unsweetened heat.
