Mrs Darlington's Hot Horseradish Sauce

Mrs Darlington's Hot Horseradish Sauce is made near Nantwich in Cheshire by a family firm that has cooked its own preserves since 1980. The maker says that if you like the full-on hit of horseradish, you need look no further, and that it is hot without being overpowering.

It uses both grated horseradish and dried horseradish, in a creamy base of rapeseed oil, water, sugar and a little egg and mustard flour, with dried turnip for body. The heat is the clean, nose-clearing sort that fresh horseradish gives, and it fades quickly rather than lingering like chilli, so a good spoonful is not a dare.

The maker's suggestion is a serving of roast beef, or a beef sandwich, and neither needs improving. It is also the right sauce for smoked mackerel or a beetroot salad, and it stirs into crème fraîche or mashed potato for something to go under a steak.
