Mrs Darlington's Hot Chilli Mayonnaise

Mrs Darlington's Hot Chilli Mayonnaise is made near Nantwich in Cheshire by a family firm that has cooked its own preserves since 1980. The maker's instruction is to spice up those sandwiches and get those taste buds tingling.

It is a real mayonnaise, made on rapeseed oil with 14% pasteurised free range egg yolk and white wine and spirit vinegar, with a tomato sauce base for colour and sweetness and then the heat: 1% chilli powder, 1% cayenne pepper, paprika, mustard and garlic. It is thick and rich, pale orange, and the warmth builds over a few mouthfuls rather than hitting at once.

It goes into a chicken or halloumi sandwich, onto a burger, and beside a bowl of chips or sweet potato fries. Stir it through prawns for a quick cocktail with a kick, or spoon it over a jacket potato with tuna. It also makes a fine dip for a Scotch egg.

A 250g glass jar. Contains egg and mustard. Vegetarian by ingredients. Keep refrigerated once opened.
