Mrs Darlington's Blackcurrant Extra Jam

Mrs Darlington's Blackcurrant Extra Jam is made near Nantwich in Cheshire by a family firm that has cooked its own preserves since 1980. The maker calls it rich, dark and tangy, a taste of summertime in a jar.

It is prepared with 47g of blackcurrants per 100g, with sugar, pectin and a little trisodium citrate to regulate the acidity, and no added colour. Blackcurrants carry more sharpness than most soft fruit, and this jam keeps that: it is intense and almost inky, with a long tart finish that cuts through butter.

The maker's suggestion is hot buttered toast, crumpets or muffins at breakfast or teatime. It is also the jam to use in a jam roly-poly or a steamed sponge, where its acidity balances the suet and sugar, and a spoonful stirred into plain yoghurt is a good breakfast on its own.
