Mrs Darlington's Apricot Extra Jam

Mrs Darlington's Apricot Extra Jam is made near Nantwich in Cheshire by a family firm that has cooked its own preserves since 1980. The maker describes the apricot as a small, golden fruit with a delicate, smooth, sweet flavour, and says this jam captures it.

The recipe is sugar, apricots, pectin and lemon juice, prepared with 43g of fruit per 100g, with no added colour or preservative. The result is amber rather than orange, with a gentle sharpness behind the sweetness that stops it being cloying. Because the fruit is cooked whole, the maker notes the jar may contain the odd stone.

The maker recommends it on brioche, and it is a good choice for a bread and butter pudding, brushed over the top before baking so it caramelises. It also works as a glaze for a fruit tart, or warmed and spooned over a plain sponge.
