A caramelised white chocolate bar made by Chocolarder at Falmouth in Cornwall, built on cocoa butter the maker presses in-house from beans grown at Three Mountains in Ghana.
White chocolate usually starts with bought-in cocoa butter. This one does not. Chocolarder press their own, then caramelise it slowly with milk and sugar until the sugars colour and the flavour turns toasty. Three ingredients go in: cocoa butter, unrefined sugar and whole milk powder. The maker's tasting notes are biscuit, caramel and shortbread, which is a fair description of what happens. It eats more like a caramel than a conventional white chocolate, and it is a good deal less sweet.
Break a square over strong coffee, or chop it into cookies where the caramel note holds up against baking. It sits naturally alongside the rest of the confectionery collection in a hamper.
