A 75% dark chocolate bar from Bachelor's Hall Estate in Jamaica. Pump Street Chocolate, the family-run bakers and chocolate makers of Orford, Suffolk, import the beans directly and make the bar from scratch: roasting, winnowing, grinding, conching for several days, then tempering by hand.
Cocoa beans, cane sugar and cocoa butter, and nothing else, at a minimum of 75% cocoa solids. The maker's tasting notes are sweet tahini, raisin and honeyed rum. They describe it as initially rich, with a satisfying melt that releases hints of sweet, juicy berries before rounding into a distinctive honeyed rum finish, which for a Jamaican bar seems right. It reads as rich rather than bitter.
Pour a glass of Filey Bay STR Red Wine Cask and eat a square or two slowly after dinner. The raisin and rum notes also suit it to Christmas: chop it into a dark fruit cake or a rum and raisin ice cream. A pot of strong coffee and a plate of Kent & Fraser Lemon Butter Shortbread on a Sunday afternoon is the simpler option.
