Cornwall Pasta Company
Chef Nicholas Egan had been cooking in professional kitchens since he was 13 when he set up Cornwall Pasta Company in February 2020. The company is based at Mylor in Cornwall and uses organic flour from millers in the South West. The pasta is extruded through bronze dies and dried slowly, which gives it a naturally porous texture.
