Tracklements Smokin' Chipotle Sauce

Tracklements Smokin' Chipotle Sauce is a hot, smoky sauce that Tracklements make at Easton Grey near Malmesbury in Wiltshire with smoked chipotle chillies alongside scotch bonnet and red chillies. The producer says it makes sizzling meats and veg explode with flavour.

Cider vinegar, onions, red peppers, tomato puree and tomatoes make up the body, with raw cane sugar and a little sunflower oil to soften it. Red chillies at 1.5%, smoked chipotles at 0.5% and scotch bonnets at 0.5% provide the heat, and coriander and lime juice finish it. The smoke comes first, then the heat, which is real but less fierce than the Rocket sauce from the same range. The tomato and pepper base makes it thicker and rounder than a vinegar-only hot sauce.

The producer suggests a dash on pulled pork, hot dogs and anything barbecued, and say it is fabulous with Mexican eggs. Use it on tacos, a bacon sandwich or grilled chicken, stir it into mayonnaise for a burger, or spoon it over a barbecued aubergine as the producer does in one of their recipes.
