Tracklements Italian Herb Dressing

Tracklements Italian Herb Dressing is a green, herb-flecked vinaigrette made by Tracklements at Easton Grey near Malmesbury in Wiltshire, where they blend it with chopped parsley, tarragon and a little of their own mustard. The producer calls it a simple yet sumptuous dressing that adds a flash of verdant colour to whatever it dresses.

The base is sunflower oil and cider vinegar, with water and a little raw cane sugar to soften the edge. Dijon mustard at 4% and a smaller amount of wholegrain mustard hold it together and give it a light tang, while the parsley and tarragon bring the colour and the fresh, faintly aniseed flavour. The producer describes it as delicate yet tastebud-tingling, which is fair: it is lighter and greener than a French dressing.

The producer suggests it with gently baked fish, couscous or quinoa salads. It is also good spooned over a mozzarella and tomato salad, tossed through warm pasta with tinned tuna, or drizzled on grilled courgettes and peppers. Use it to dress a bowl of white beans with red onion for a quick lunch.

The bottle holds 240ml. Contains mustard. Shake well before use and refrigerate once opened.
