Mrs Darlington's Wild Blueberry Jam

Mrs Darlington's Wild Blueberry Jam is made near Nantwich in Cheshire by a family firm that has cooked its own preserves since 1980. The maker uses only wild blueberries, chosen for their intense flavour over the milder cultivated kind.

The recipe is sugar, wild blueberries, pectin and lemon juice, prepared with 47g of fruit per 100g and with no added colour or preservative. Wild blueberries are smaller and darker than the supermarket sort, and the jam is correspondingly deep in colour, with a winey depth and a soft set full of whole berries.

It belongs on American-style pancakes or waffles, and it is very good swirled through porridge or a bowl of thick yoghurt. Spread it on a warm scone with butter rather than cream, so the fruit does the talking, or use it to fill a batch of muffins before baking.
