Oxford Isis Washed Rind Cheese 200g

Oxford Isis is a soft washed-rind cheese of 200g whose rind is washed in honey mead, which the producer describes as a pure distilled honey. The Oxford Cheese Company make it at Burford in Oxfordshire, a firm that began as a cheese shop in Oxford's covered market in 1983 and now makes its own cheeses for the city's colleges and restaurants.

The supplied ingredient list is unpasteurised cow's milk, vegetarian rennet, salt and mead, so it is a raw milk cheese suitable for vegetarians. Mead washing gives the rind its orange-gold colour and sticky surface, and washed rinds of this kind are strong-smelling with a paste that is softer and milder than the smell suggests. The mead accounts for the sulphites declared.

Serve it at room temperature as the pungent cheese on a board, next to something gentler such as Nettlebed Creamery Bix and a hard cheese like Quicke's Mature Cheddar. It suits rye bread, cornichons and a glass of cider or a Belgian-style beer, and a spoon of Tracklements Sticky Fig Relish balances the rind.
