Nettlebed Creamery Bix Organic Soft Cheese 100g

Bix is a triple-cream soft cheese, about 100g, made by Nettlebed Creamery in the village of Nettlebed, near Henley-on-Thames in Oxfordshire, from their own organic milk, certified by the Soil Association, with double cream added to the vat. The creamery calls it luxurious and complex, and says most people find it very hard not to finish one in a single sitting.

The ingredients are pasteurised organic cow's milk at 85%, double cream at 15%, animal rennet, starter cultures and salt. The added cream is what makes it a triple-cream: the paste is rich and buttery, breaking down from the rind inward as it ripens until the centre is soft enough to spoon. It took Silver at the 2025 World Cheese Awards and a Great Taste star the same year.

Take it out of the fridge an hour before you eat it. A cheese this rich wants something plain and crisp beside it, so put it with Peter's Yard Original Sourdough Crackers and a spoonful of Rosebud Preserves Quince Jelly. It sits at the soft end of a board next to a blue such as Long Clawson Blue Stilton Wedge, and a glass of something sparkling cuts through the cream.

Around 100g. Contains milk. Made with animal rennet, so not suitable for vegetarians. Keep refrigerated in its wrapper and eat within a few days of opening.
