Village Maid Maida Vale Washed Rind Cheese 200g

Maida Vale is a semi-soft washed-rind cheese, about 200g, whose rind is bathed in Soundwave IPA from Siren Craft Brew as it matures. Village Maid Cheese make it by hand at their dairy in Riseley, Berkshire, from pasteurised Guernsey cow's milk that travels two miles from Heckfield Park Farm, set with vegetarian rennet.

The producer washes the curd, draining whey and replacing it with water to lower the acidity, which gives a slightly firmer, fudgy texture with more bite and a milder flavour than a brie. The ale washing brings tangy, bittersweet, malty notes to the pale orange rind, and the paste beneath is buttery and soft. It is savoury rather than pungent, with a hoppy, salty edge at the rind.

Take it out of the fridge an hour before serving. Put it on a board with Miller's Ale Crackers and a spoon of Mrs Darlington's Real Ale Chutney to carry the beer theme through, or melt slices over a burger or into a toastie. A glass of Lyme Bay Winery Pinot Noir suits it.

One round, around 200g; the cheese is hand-made and weights vary. Contains milk and gluten from the IPA. Pasteurised, vegetarian rennet, suitable for vegetarians.
