King Stone Dairy Yarlington Cider Washed Cheese 220g

Yarlington is a soft, washed-rind cow's milk cheese whose rind is gently washed in brine and Yarlington Mill cider, made by hand by King Stone Dairy at Manor Farm, Chedworth in Gloucestershire, from the milk of a single organic herd.

The dairy describes the cheese as a collaboration between cheesemaker David Jowett, cider maker Tom Oliver and Sam Wilkin, named after Yarlington Mill in Somerset, home of the first Yarlington Mill cider apple. It is made from pasteurised cow's milk with sea salt, cider, starter culture and animal rennet, so it is not suitable for vegetarians, and aged for six to eight weeks. Washing the rind gives it an orange, slightly sticky surface and a savoury, meaty depth, with the cider adding a faint orchard note behind it. The paste is supple and rich.

Take it out of the fridge an hour before serving so the paste softens. Eat it with a slice of Peter's Yard Seeded Sourdough Flatbreads or one of the crackers for cheese, and a glass of dry cider or a light red. The dairy suggests it in a tartiflette, melted over potatoes, onions and bacon, which is a fine use for the last of the wheel. Its sibling Rollright is banded in spruce bark rather than washed in cider.

A 220g round. Contains milk and sulphites from the cider, and the animal rennet means it is not suitable for vegetarians. Keep refrigerated.
