Shorrocks Lancashire Bomb Waxed Cheese 460g

The Lancashire Bomb is a whole Lancashire cheese sealed in wax, made by Shorrocks at Goosnargh in Lancashire from pasteurised cow's milk with vegetarian rennet. It is a ball rather than a wheel, which is where the name comes from, and each one is coated and sold whole.

The ingredient list is as short as a cheese gets: pasteurised cow's milk, salt, vegetarian rennet and lactic culture. Lancashire is a cow's milk territorial cheese, and the wax coat keeps the cheese sealed until you cut it open. This is the larger of the two sizes, roughly 450 to 490g, enough for a table rather than a couple. Milk is the only declared allergen.

Cut off the top of the wax and slice down into the cheese as you need it. Lancashire is the classic partner for a fruit cake or an apple, and the crumbly, savoury style suits a spoon of Drivers Real Ale Chutney or a few Drivers 1906 Pickled Onions alongside. It also melts well: try it on toast under the grill, or grated into a cheese and onion pie.

A whole waxed bomb of about 460g, sent chilled. Vegetarian rennet, so it suits vegetarians. Bring it to room temperature before serving and keep it wrapped in the fridge once opened.
