Cox & Co. Bee Pollen & Honey 60% Dark Chocolate Bar

A 70g bar of Colombian dark chocolate with bee pollen and a honey note, made by Cox & Co, who use single-origin Colombian chocolate sweetened with panela rather than refined white sugar. The bar is 98% chocolate, with 1% bee pollen granules and less than 1% natural honey flavour.

The chocolate is Trapiche Colombian dark at a minimum of 61% cocoa solids, made from cocoa mass, panela, cocoa butter, soya lecithin and vanilla extract. Panela is dried sugar cane juice, and it gives the sweetness a slightly darker, more caramel edge than refined sugar would. The bee pollen sits on the bar as small granules, so there is a faint crunch and a floral, honeyed note against the cocoa. At 60% this is a dark chocolate that stays on the gentle side.

Eat it in squares with a cup of Cornish Coffee or a pot of Tregothnan English Breakfast, or break it into pieces over a bowl of Greek yoghurt with more honey. It also works chopped into a flapjack. For the dark chocolate drinker who wants something a little sweeter than usual, this is the bar to try.
