Pump Street Dark Milk Chocolate Cookie Chip 60%

A 60% dark milk chocolate bar with pieces of baked cookie set through it. Pump Street Chocolate, the family-run bakers and chocolate makers of Orford, Suffolk, bake the cookie dough themselves, then fold the broken cookie into chocolate they have made from the bean in small batches.

The cookie is 26.6% of the bar, made from wheat flour, butter, brown and white sugar and egg, baked until caramelised. Around it is dark milk chocolate at a minimum of 59% cocoa solids, with milk powder softening the cocoa. The maker's tasting notes are crumbled buttery biscuit and rounded cocoa: it eats like a chocolate chip cookie turned inside out, with the biscuit giving crunch and a toasty, buttery sweetness against a chocolate that is deeper than a standard milk bar.

Good with a mid-morning cup of Taylors English Breakfast, or a glass of cold milk. Chop it roughly and fold it through cookie dough or brownie batter, or scatter squares over a bowl of vanilla ice cream. It is the bar in the range most likely to win over people who say they only like milk chocolate.
