Tracklements British Beer Mustard

Tracklements British Beer Mustard is a coarse wholegrain mustard made by Tracklements at Easton Grey near Malmesbury in Wiltshire with a malty Wiltshire beer. The producer says the beer does great things for slabs of ham, pork pies and good, mature cheddar.

According to the producer's ingredient list, mustard seed makes up 28% of the jar and beer 24%, held in cider vinegar with sea salt, black peppercorns, allspice and chillies. Because the seed is left whole and coarse, the mustard has texture and a slower, rounder heat than a smooth English mustard, and the beer adds a malty, faintly bitter depth underneath. The peppercorns, allspice and chilli give it a little warmth of their own.

The producer says it goes with sausages, and it suits anything from a pork pie to a thick ham sandwich. Spoon it beside a slab of gammon, work it into a Welsh rarebit mix, fold it through a warm potato salad with spring onions, or spread it inside a cheese and pickle sandwich. It makes a good glaze for baked ham when mixed with a little honey.

The jar holds 140g. Contains mustard and gluten from the barley in the beer. The ingredient list has no animal products, so it is suitable for vegans. Refrigerate once opened.
