Sarah Darlington created it for her farmer husband Tim to have with his daily ploughman's lunch, and it took seven attempts before he gave it his approval, hence the name.\u003c\/p\u003e\u003cp\u003eThe maker cooks it in open pans, and the jar is full of crunchy vegetables: carrots, onion, swede, cauliflower and gherkins, with tart Bramley apples, dates, tomato paste, garlic and gentle spices in a sauce of spirit and malt vinegar. It is chunkier and less sweet than the big-brand pickle, with the vinegar and apple giving it a proper tang.\u003c\/p\u003e\u003cp\u003eThis is the pickle for a cheese sandwich, a pork pie, a slice of cold ham or a ploughman's plate with a hunk of \u003ca href=\"\/products\/quickes-mature-cheddar\"\u003eQuicke's Mature Clothbound Cheddar\u003c\/a\u003e and \u003ca href=\"\/collections\/crackers-for-cheese\"\u003ecrackers\u003c\/a\u003e.
