The maturation warehouses sit in a microclimate cooler and damper than most of England, drawing slower, gentler interactions between whisky and oak.\u003c\/p\u003e\n\u003cp\u003eThe Whiskymaker's Reserve series is whiskymaker Dhavall Gandhi's evolving exploration of a sherry-led English single malt house style, a ladder of releases, each one refining the last. Gandhi joined The Lakes in 2016 from The Macallan, and brought with him a methodical, almost scientific approach to cask selection. No.5 was created by the principle of \u003cem\u003eélevage\u003c\/em\u003e, borrowed from Cognac: monitoring every cask continuously, transferring spirit between casks as needed, and shepherding the whisky through maturation rather than simply waiting on it.\u003c\/p\u003e\n\u003cp\u003eThe casks for No.5 are bespoke Oloroso, PX and red wine: a combination of Spanish and American oak. The result is sherry-led, wood-forward and elegant. Bottled at \u003cstrong\u003e52% ABV\u003c\/strong\u003e, non-chill filtered, at natural colour.\u003c\/p\u003e\n\u003cp\u003eOn the nose: dried figs, sultanas, morello cherries, sugared orange peel, with molasses and toffee underneath. On the palate: thick and oily, baklava sweetness with brown sugar, honey and pistachio, then deeper red berries from the wine casks, dark coffee, creamy chocolate. The barley is 100% homegrown, regeneratively farmed at the family's Hunmanby Grange Farm. The water comes from the same chalk that lies beneath the vineyards of Champagne and the South Downs. First, in American oak ex-bourbon barrels, the foundation of the light, creamy, fruity Filey Bay house style. Then finished in shaved, toasted and re-charred (STR) ex-red wine casks from Spanish Rioja vineyards. The STR technique was developed by the late Dr Jim Swan, the whisky industry's most celebrated cask consultant, who mentored the Filey Bay team in their early years. Shaving the cask removes spent wood; toasting and re-charring activates fresh oak tannins.
