The producer describes it as dark green with a nutty taste and similar in consistency to a virgin olive oil, and that is a fair guide: it is thick, grassy and green, with a nutty flavour that is closer to a walnut oil than to a neutral cooking oil. Cold pressing keeps that flavour intact, which is also why it should not be heated.\u003c\/p\u003e\u003cp\u003eThe producer says to use it as a cold culinary oil, in salads, sauces, soups, pesto and smoothies, and suggests a tablespoon a day.
