The producer describes a slow, gentle process: the milk ferments for up to 24 hours before the curd is ladled by hand into moulds. Young, it is fresh and creamy; with age it develops more complex flavours, leaning buttery in winter and towards vegetal, grassy notes when the cows are out at pasture. It is usually eaten between two and five weeks old.\u003c\/p\u003e\u003cp\u003eLet it come to room temperature and eat it with a spoon, or on a plain cracker such as \u003ca href=\"\/products\/peters-yard-original-sourdough-crackers\"\u003ePeter's Yard Original Sourdough Crackers\u003c\/a\u003e.
