The spelt is regeneratively grown in the UK and bought from UK millers, and the maker describes the result as a nutty flavour and a comforting mouthful. The bronze die leaves the surface rough, which is why sauce clings to it, and the slow drying keeps the bite. It cooks to a firm al dente and holds its spiral shape in the pan.\u003c\/p\u003e\u003cp\u003eBoil it in plenty of well-salted water and taste it before the time on the bag is up.
