It is wrapped in parchment and sealed with red wax, a presentation the maker says goes back to the 1700s.\u003c\/p\u003e\u003cp\u003eThe maker describes it as soft and creamy under a white bloomy rind: slightly chalky in the centre when young, then gooey and spreadable beneath the rind as it ripens. The smell is earthy and mushroomy, with hay and warm milk. On the palate it opens with lemony brightness and a gentle tang, then deepens into mushroom and a savoury, broth-like note as it ages. It is sent out at around four weeks old, so what you get depends a little on how long you wait.\u003c\/p\u003e\u003cp\u003eBring it to room temperature before serving; cold, it is tight and mild, and warm it turns spoonable. Put it on a board with \u003ca href=\"\/products\/peters-yard-original-sourdough-crackers\"\u003ePeter's Yard Original Sourdough Crackers\u003c\/a\u003e and a little \u003ca href=\"\/products\/rosebud-preserves-quince-jelly\"\u003eRosebud Preserves Quince Jelly\u003c\/a\u003e, or bake the whole cheese in its box with a sprig of thyme and dip bread into it. A glass of \u003ca href=\"\/products\/lyme-bay-winery-chardonnay\"\u003eLyme Bay Winery Chardonnay\u003c\/a\u003e suits it.\u003c\/p\u003e\u003cp\u003eA 250g cheese, sent chilled.
